This is my favorite soup to make. It's all fresh vegetables,like courgettes, onions, pumpkins,(leave the skin on)3 potatoes, a touch of cumin seeds, paprika;little sprinkling, a pinch of salt and pepper, carrots, black-eyed peas, and mixed dried peas, and anything else that you can get.
Cook your onions first and sweat these down, and then put in you pumpkins, peas and simmer these for over a good hour.
Then put in the rest of the ingredients, and of course don't forget, to put the water in.
Then cook for another half an hour and keep stirring and tasting, and how much you like the spice.
At the very end put in some fresh peppermint, as this is so subtle, and makes a wonderful flavor. However, you have to chop this finely.
Now serve when all is cooked, and tender, and not mushy.
Serve with warm rolls that you have made yourself, or buy some from shop.
