Finger Lickin' Chicken is a recipe that I make quite often when I am having guests over for a meal. It is quick to prepare, and also quite reasonable to make. You can serve it either with mashed potato or rice with a salad on the side.
As a pensioner, I am always on the look out for cheap meals for entertaining, and so am sharing this one with you today. I do hope you like it!
Serves 6
8 Chicken Breasts cut into strips
2 Onions thinly sliced
1 Green Pepper cut into strips
30 ml Sugar
100 ml water
60 ml Chutney
15-30 ml Worcester Sauce
50 ml Tomato Sauce
30 ml Tomato Paste
Oil for browning
Salt and Pepper
Method:
Season chicken strips and lightly brown in the oil. Set aside and keep warm. Saute the onions and green peppers. Add remaining ingredients and bring to the boil stirring continuously, then reduce heat and simmer until a thick sauce is formed.
Add chicken and serve with rice and a green salad.
