Hi,
Could you please advise me whether it is ok for the juice to sit for 6 weeks instead of 2-3 before bottling?
Would it be ruined?

Hi Penny
The longer you leave the cider to ferment the stronger it will be, however, if you leave it for as long as you intend you have a strong possibility of ending up with something that more resembles vinegar than cider.
