This delicate lemon pudding recipe is simple to make and truly delicious! It is tart, without being overly so, and my family are always asking me to make this.
Just remember when you put the pudding into the oven that you stand it in a pan of hot water. I usually boil the kettle and pour the water directly into the pan so that the water is hot enough by the time I put the pudding into the oven.
Ingredients:
2 Tbs Butter
2/3 Cup Sugar
2 Eggs separated
2 Tbs Lemon Juice (1 lemon)
2 Tbs Flour
1 Cup Milk
Grated lemon rind
Method:
Cream the butter, add sugar and cream well. Beat egg yolks until thick and lemon colored. Add to mixture with lemon juice.
Fold in flour and stir in milk. Add finely grated lemon rind.
Beat egg whites and fold into first mixture.
Pour into greased dish, set in pan of hot water. Bake at 190ยบ C (375 F) for 35-40 minutes. Serve with cream.
