These are healthy carrot and spice biscuits that are great to pack in children's lunch boxes.
125g (4 1/2 oz) butter
1/4 cup icing sugar
1/4 cup grated carrot, firmly packed
185g plain flour
1/2 teaspoon cinnamon
1 teaspoon mixed spice
75g (3 oz) castor sugar
1/2 teaspoon mixed spice, extra
Pre-heat oven to 180°C. (350 F)
Grease oven trays. Cream butter and icing sugar in a small bowl with an electric beater until light and fluffy.
Stir in carrot, sifted flour, cinnamon and mixed spice. Taking teaspoonfuls at a time, roll into balls and set aside until all the mixture has been used in this way.
Mix the sugar and the last of the mixed spice in a bowl and roll the balls of mixture into this coating well.
Place on the greased trays and flatten gently with a fork. Bake at 180 C (350 F) for about 20 minutes, or until light brown.
Leave to cool in the trays for 5 minutes before removing and placing on wire racks to cool completely.
