Hi all,
Thanks for this website. It makes a lot of sense to return to living with and off the land-- not against the land!
I am new to food preservation, and am wondering which way(s) are the best for preserving nutrition in food. Water-boil canning? Pressure Canning? Freezing? Drying? etc.
I want to try to live on home-grown or locally grown foods as close to 100% as possible, and would like to have the most nutritious food possible.
I'm guessing that the amount of vitamins and nutrients maintained in the preserving process varies by food as well as by the method of preserving. Do you know where I can look to research this more? Thanks so much.
